Peanut Butter Oatmeal Chocolate Chip Cookies

Preheat oven to 350. Line two large baking sheets with parchment paper.

  • 1/2 cup (1 stick) unsalted butter, soft to room temp.
  • 3/4 cup of brown sugar
  • 1/4 cup sugar
  • 1/2 cup creamy peanut butter
  • 1 egg
  • 1 tsp vanilla

Put butter, sugars and peanut butter into mixing bowl. Using a mixer, beat until well combined. Add in egg and vanilla. Beat until combined and looks fluffy. Gather your next ingredients.

  • 1 cup flour
  • 1 1/4 cups of oats
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Put all these ingredients into bowl and mix until well combined, scraping sides of bowl if needed.

  • 1 cup milk chocolate chips

Put chips in cookie dough and, using a rubber spatula, mix until combined thoroughly.

Using a 1 Tbsp (it doesn't have to be exact), spoon dough onto cookie sheets. Using 3 fingers, gently press down each ball slightly. Cook for 12 min. Allow to cool on baking sheet before transferring to wire rack.
