Garlic Knots

Makes 12 knots

  • 2 tsp active dry yeast
  • 1 cup warm water
  • 1 tsp of sugar

Put warm water in a mixing bowl. Sprinkle the yeast over the water. Using a whisk, mix the yeast into water. Sprinkle sugar into mixture. Give another little stir. Let sit for 5-10 min. It should start to foam inside the mixture and bubble a little and start smelling sour. If this doesn't happen, throw out, rinse and start over. While thats proofing, gather your next ingredients.

  • 1 1/4 tsp salt
  • 2 Tbsp olive oil
  • 2 1/2 - 3 cups flour

Add salt, oil, and 1 1/2 cups of flour to yeast mix. Using a whisk, mix thoroughly until it looks like pancake batter. Add another cup of flour and using a rubber spatula, mix until a ball starts forming. Add a little flour if needed, until its only slightly sticky. Sprinkle a little flour on a clean counter surface and start kneading the ball. To do this, I use my palms and fold the dough in to try to keep the ball shape going. Place the ball in an oiled bowl (I use the same bowl I mixed it in), cover with cling wrap and set in warm location (the stove light is a great spot) until it as a risen to double the size. Usually the cling wrap starts stretching.

Line a Large baking sheet, or 2 smaller ones, with parchment paper.

Gently punch down the ball and start dividing. I do it by dividing it in 2 each time. Big ball goes to 2 medium. Each one makes 2 more, so you have 4, and so on. You should be able to make 12.

Lightly sprinkle flour on counter and roll each dough ball into a rope, about 8 in long. Tie in a knot. Lay them on the baking sheet(s). Cover with cling wrap and let rise to double the size.

Preheat oven to 425. Bake for 20 min. While they are baking, make your garlic butter.

  • 1/4 cup (half stick) unsalted butter
  • 1/4 cup olive oil
  • 6 cloves of garlic, smashed and minced
  • 1/2 tsp salt
  • 1/8 tsp pepper

Place everything in a bowl. Cover with a paper towel and put in the microwave for about 45 sec. I usually check and stir at 30 sec. Drizzle over your baked knots and garnish with fresh parsley.

Overall this recipe takes about 3 hours
