Easy Cajun Pasta

Makes 6 servings

* Vegan

  • 10 oz pasta (I used spaghetti. I'll try Penne next)

Cook pasta according to directions. While pasta is cooking, start on the sauce.

  • 1 Tbsp oil
  • 5 garlic cloves, minced
  • 1/2 cup chopped bell pepper
  • 3/4 cup chopped onion

In a skillet, on medium heat, heat oil. Add garlic, pepper and onion and fry for 3 min. Gather next ingredients.

  • 3 Tbsps cajun seasoning
  • 1/2 cup coconut milk
  • 1 cup (rinsed and heated through) black beans
  • Salt and pepper

Add the black beans, coconut milk, cajun seasoning and salt and pepper to the skillet. Cook for about 5 mins. By now your pasta should be done. Drain and put back in pot. Add Cajun Sauce to pasta. Mix well and serve!
